HONEY MUSTARD APRICOT GLAZE

2/3 cup B&R Farms Dried Apricots
2/3 cup white wine vinegar
1/4 cup Dijon-style mustard
1/2 cup honey
1/4 cup minced shallot
2 Tbsp. unsalted butter
1 tsp. salt, or to taste

In a small, heavy saucepan combine the apricots with 1 1/2 cups water, bring the water to a boil and simmer the apricots, uncovered for 12 to 15 minutes or until they are tender and the liquid is reduced by half. In a food processor or blender puree the apricots with the cooking liquid, add the vinegar, the mustard and the honey, and blend the mixture until it is combined well.

Honey Mustard Apricot Glaze Directions:

In the pan, cook the shallot in the butter until it is softened, add the apricot mixture, the salt, and the white pepper, and bring the mixture to a boil. Simmer the mixture, uncovered, stirring occasionally for 8 to 10 minutes, or until it is thickened. Brush the glaze on pork or chicken during the last third of it's cooking time. This keeps, covered and chilled, for up to 2 weeks.
