APRICOT BUTTER

2 pounds B&R Farms dried apricots
(soak in water until about doubled in size)
granulated sugar
2 tsp. cinnamon
1/2 tsp. allspice
juice of 1 lemon
grated rind of 1 lemon (optional)pectin

Put apricots in blender, a little at a time, and add to a total of about 2 cups in blender each time until all is thoroughly crushed. Add 1/2 cup granulated sugar to each cup of pulp. Add cinnamon, allspice, lemon juice, and grated rind to a total pulp.

Bring to a boil. Add 1 container of pectin for every 5 cups pulp. Cook until mixture "sheets" from wood spoon while stirring frequently. Place in sterile jar. Add canning wax and let cool. Seal lids when jars are cold. Store in cool, dry place. Keeps a long time.
