| Fruit and Seed Bars 1 cup sesame seeds Combine sesame seeds, chopped nuts, and sunflower or pumpkin seeds. Spread in a thin layer on a rimmed baking sheet. Roast in a 350F oven for about 15 minutes or until light golden, shaking pan occasionally; set aside. In a Wide frying pan over medium heat, combine brown sugar, honey, salt and dried fruit. Bring mixture to a boil, stirring constantly, and cook for 2 minutes. Remove pan from heat and immediately stir in seeds, nuts, and coconut; mix thoroughly. Turn into a well-buttered, shallow 9x13in baking dish. With a large, buttered spoon, press mixture firmly and evenly over bottom. Let cool at room temperature for 30 minutes, then lift out with a wide spatula. Use a large knife to cut into 11/2 by 3-inch rectangles. When no longer sticky (after about 3 hours), wrap individual pieces or several pieces together in plastic wrap. Store at room temperature. Makes 22 bars. |
