APRICOT PORK PICANTE

4 boneless top lion pork chops
(about 1 ½pound), cubed
2 tablespoons taco seasoning
1 tablespoon extra-virgin olive oil
1 cup salsa
4 tablespoons B&R Farms Red Pepper Topping

Toss pork with taco seasoning. Heat oil in non-stick skillet over moderately high heat and brown pork. Stir in salsa and red pepper topping, bring to a boil, lower heat, cover and simmer 8 to 10 minutes. Serves 4.
