CHICKEN WITH APRICOT SALSA
4 skinned and boned chicken breast halves
1/4 cup plain yogurt
1/4 cup mayonnaise
1 garlic clove, pressed
11/2 tsp. curry powder
1 tsp. grated fresh ginger
Lettuce leaves
Apricot salsa

Bring chicken breasts and water to cover to a boil in a large Dutch oven; cover, reduce heat, and simmer 30 minutes or until tender. Drain, cool, and chop chicken.

Stir together yogurt and next 4 ingredients until blended; pour over chicken, tossing gently to coat. Cover and chill.

Server chicken mixture on lettuce-lined plates with Apricot salsa.
Yield: 4 servings.

APRICOT SALSA
2 Tbsp. lime juice
2 Tbsp. olive oil
1/4 tsp. salt
1/8 tsp. coarsely ground pepper
4 B&R Farms dried apricots diced (soak in water till doubled in size)
1/2 cup diced purple onion
1/3 cup diced red bell pepper

Whisk together first 4 ingredients until blended; stir in apricot, onion, and bell pepper. Cover and chill.
Yield: about 4 cups.
