CHICKEN WITH APRICOT
SALSA Bring chicken breasts and water to cover to a boil in a large Dutch oven; cover, reduce heat, and simmer 30 minutes or until tender. Drain, cool, and chop chicken. Stir together yogurt and next 4 ingredients until blended; pour over chicken, tossing gently to coat. Cover and chill. Server chicken mixture
on lettuce-lined plates with Apricot salsa. APRICOT
SALSA Whisk together first
4 ingredients until blended; stir in apricot, onion, and bell pepper.
