BROILED APRICOT CHILI CHICKEN AND PEPPERS

4 chicken breast halves
2 medium red, yellow or green sweet peppers
1/4 cup B&R Farms Dried Apricot Red Pepper Topping
2 Tbsp. soy sauce
1 Tbsp. snipped fresh cilantro or parsley

Heat broiler. Rinse chicken; pat dry. Place chicken pieces on the unheated rack of a broiler pan. Half peppers from stem to tip, remove center core. Cut each half into four wedges. Place peppers, cut side down on broiler pan.

Stir together apricot topping, soy sauce and snipped cilantro or parsley in a small bowl. Brush chicken and pepper pieces lightly with apricot topping mixture. Broil 4 to 5 inches from the heat for 5 mins. Turn chicken and peppers; brush generously with sauce mixture. Broil 4 to 6 mins. more or until chicken is tender and no longer pink, brushing once or twice more with sauce during cooking. Serve each piece of chicken with four pepper wedges. Makes 4 servings.
