CHEESE TORTELLINI TWIRLS WITH B&R FARMS DRIED APRICOT PRESERVES

2 oz. packages fresh cheese tortellini
1 6 wood skewers
1 cup B&R Farms Dried Apricot Preserves
1/4 cup red wine vinegar
1 tsp chopped garlic
1/4 tsp pepper
2 tbsp tomato paste
½ cup diced black olives
1/4 cup chopped parsley or basil

1. Cook tortellini as directed on package.

2. Thread 3 tortellini on each 6 skewers. Place in shallow tray.

3. Combine all remaining ingredients except parsley; pour over tortellini. Marinate overnight in refrigerator.

4. Serve cold or heat at 350 degrees for 12 to 15 minutes. Serve garnished with parsley.
