FRUITED WHOLE-WHEAT COUSCOUS 2 cans (14 ½
oz. each) fat-free chicken broth Mix broth, chickpeas, garlic and cinnamon in a 3 to 4qt saucepan. Bring to a boil; stir in couscous. Return to a boil, reduce heat, cover and simmer 2 minutes or until all broth is absorbed. Stir in fruit, remove from heat and let stand 5 minutes. Stir to fluff, spoon into serving dish and sprinkle with parsley. |
