HALIBUT WITH DRIED APRICOT RED PEPPER TOPPING

Four 6 ounce halibut fillets or stakes
2 tablespoons butter
1/3 cup dry white wine
1 teaspoon minced parsley
4 tablespoons Dried Apricot Red Pepper Topping

Preheat oven to 375F. In a shallow baking dish, place the halibut, skin side down. Place ½ Tablespoon of butter on each fillet; drizzle with the white wine and sprinkle with parsley. Bake uncovered just until partially done, approximately 5-7 minutes. Remove halibut from oven and spoon 1 Tablespoon of Dried Apricot Red Pepper Topping over each fillet. Return halibut to oven and continue to bake an additional 5-7 minutes, depending on the thickness of the fish, until done.
