LOW FAT APRICOT BALSAMIC VINAIGRETTE
½ cup balsamic vinegar
1/4 cup B&R Farms Dried Apricot Preserves
2 tablespoons extra virgin olive oil
2 tablespoons water
2 teaspoons dijon mustard
1 clove garlic, minced
1/8 teaspoon salt
freshly ground black pepper
Whisk all ingredients together in a small bowl except salt and pepper;
season to taste. Serve over your favorite salad greens.
