APRICOT PINEAPPLE MOLD

1 ½ cups B&R Farms Dried Apricots
1 cup syrup from pineapple
1 envelope (1 tbsp) gelatin
3 tbsp cold water
1 cup granulated sugar
3 egg whites
Few grains of salt
2 slices pineapple

Rinse apricots, cover with water and boil until tender. Drain off most of liquid and press apricots through sieve. Heat pineapple syrup. Soften gelatin in water and dissolve in hot pineapple syrup. Stir in pureed apricots and sugar. Mix thoroughly. Beat egg whites with salt until stiff. Fold into gelatin mixture with diced pineapple. Turn into mold and chill until firm. Unmold and serve plain, or whipped cream.
Serves six
